Frijoles Blancos con Costilla de Puerco

  • 3 lb pork ribs
  • salt and pepper to taste
  • 1/2 bunch fresh oregano
  • 1/2 bunch fresh thyme
  • 4 cloves garlic
  • 2 bay leaves
  • 1/2 white onion, cut into wedges
  • 1 red bell pepper, cut into large pieces
  • 3 large plum tomatoes, cut into wedges
  • 3 tomatillos
  • 2 chiles guaces, seeds and stems removed
  • 1 tsp ground cumin
  • 2 lb white beans
  • 20 cups hot water
  • 2 tbsp salt
  • 1/2 bunch cilantro, chopped
  • Rice and/or tortillas

Season ribs with salt and pepper. Sauté over medium heat in a large pot until browned on all sides. Add oregano, thyme, garlic cloves and bay leaves. Sauté for another 1-2 minutes. Remove ribs into a bowl, leaving fat from ribs in the pot.

Sauté onion, tomatoes, tomatillos, and guaces in pot with the fat from the ribs. Add cumin and sauté until vegetables are tender. Blend vegetable mixture and set aside.

Boil as much water in the pot as will fit with 2 tbsp salt and add the beans. Cook for 1 hour. Add ribs and blended vegetables and cook for another hour, adding more hot water as needed to keep beans and meat covered. When beans are cooked and ribs are tender, add more salt and pepper to desired taste. Serve in bowls with chopped cilantro as a garnish with rice and/or tortillas as you prefer.
