- 4 lb chuck roast, trimmed and cut into large cubes
- salt and pepper to taste
- 3 bay leaves
- 3 sprigs thyme
- 2 garlic cloves
- 1 tbsp vegetable oil
- 1 white onion
- 2 cloves garlic
- 2 chiles guaces
- 3 small red bell peppers, cut into 2-inch pieces
- 6 plum tomatoes, cut into 2-inch pieces
- salt and pepper to taste
- 4 cups water
- 3 large russet potatoes, peeled and cut into large chunks
- 4 large carrots, peeled and cut into large chunks
Saute beef in a large pot with salt, pepper, bay leaves, thyme and 2 cloves garlic until browned throughout.
Heat oil in pan and saute onion until translucent and garlic until fragrant. Add chiles, bell peppers, and tomatoes with salt and pepper. Saute until softened. Blend well and pour through strainer into pot with beef. Simmer until beef is starting to get tender. Add potatoes and carrots and cook until fork tender. Serve with rice and tortillas.
