Atol de Platano

  • 6 plantains
  • 18 cups water
  • 2 sticks of cinnamon
  • 3 whole allspice berries
  • 1 1/2 cups granulated sugar
  • 1 tsp salt

Keeping skins on, cut plantains into large pieces. Rinse, then boil in water with cinnamon and allspice. When plantain pieces are plump and coming out of skins, remove and discard cinnamon and skins.

Blend, mix in sugar and salt, Simmer until desired consistency and enjoy!
