Desayuno Chapin

  • 1/2 lb. black beans, raw
  • 1/2 white onion
  • 3 cloves garlic
  • 6 longanizas
  • butter
  • 8 eggs
  • salt
  • 1 bunch of green onions, cut small
  • vegetable oil
  • 4 plantains, peeled and cut into 1/2 inch slices on a bias
  • Pan Frances
  • Assortment of Pan dulce
  • Coffee
  • Sour cream
  • Queso Fresco

Rinse and boil beans in large pot with 1/4 white onion and garlic. When fully cooked, blend to a smooth consistency. Dice remaining 1/4 white onion and sauté on medium heat with a little oil until browned and add blended beans. Cook until thickened.

Poke longanizas with a toothpick and boil until cooked throughout. Sauté until browned.

Heat oil and sauté plantains until golden brown on both sides.

Scramble eggs and add to a pan with melted butter over medium low heat. Cook eggs until fluffy, add salt and green onions. Cook for another minute or two.

Serve with breads, sour cream, cheese, and coffee.

Variations: whole beans, add tomatoes to the eggs, plantains boiled with cinnamon
