- 6-7 large plantains
- 1/2 cup vegetable oil
- 1/4 cup sesame seeds
- 1/4 cup pepitas (pumpkin seeds)
- 4 large tomatoes
- 1 chile pasilla, dried
- 1 cinnamon stick
- 1/4 cup cocoa powder
- 1/4 cup sugar
- 2 Abuelita chocolate wheels
Peel and cut plantains on a bias into 1/2-inch-wide pieces. Sauté in vegetable oil until golden brown and set aside.
Toast sesame and pumpkin seeds until golden brown and put into a saucepot, reserving some of the sesame seeds for garnish. Toast tomatoes and chiles until charred and add to saucepot. *Be careful not to burn chiles. Add water, chocolate wheels, cinnamon stick, cocoa powder, and sugar. Bring to a boil and simmer until tomatoes are fully cooked and chocolate wheels are melted. Remove cinnamon stick and set aside.
Blend sauce until smooth and add back to pot with cinnamon stick and plantains. Cover and simmer on low heat for 15 minutes, stirring occasionally to keep from sticking. Serve with some toasted sesame seeds as a garnish.
