- 7 each ripe plantains
- 1 each cinnamon stick
- 2 cups black beans, raw
- 7 tbsp granulated sugar
- 2 tsp cinnamon powder
- 3 tsp cocoa powder
- 1/2 cup flour
- vegetable oil
Cut plantains in 2-inch sections and boil with cinnamon stick and sugar. Peel plantains and mash until mostly smooth. Let cool to room temperature.
Boil beans in water only until tender. Blend beans and mix in sugar, cinnamon, and cocoa powder.
Using gloves, take 1/2 cup of plantains and form into a boat. Add a little bean mixture to inside and fold plantains around beans to stuff them. Roll rellenitos in flour and fry in vegetable oil until browned on each side. Serve with a sprinkle of cinnamon and sugar.
