  • 1 whole chicken, cut up and skinned
  • chicken bouillon
  • salt and pepper
  • 1 bunch green onions, cut into large pieces
  • 1 green bell pepper, cut into large chunks
  • 8 tomatillos, peeled and cut into halves
  • 6 potatoes, peeled and cut into quarters or halves, depending on size
  • 2 cups white rice
  • 1 bunch cilantro, chopped
  • 2 avocados cut in half and sliced

Season chicken with bouillon, salt and pepper and sauté until browned on all sides. In a separate pan, char green onions and bell pepper. Add tomatillos and cook until tender. Blend vegetables and add to pot with chicken. Add potatoes, cover and cook on medium heat until chicken reaches 165 degrees Fahrenheit and potatoes are fork tender. Serve with cilantro and avocado.
