Envueltos de Coliflor

  • 2 heads cauliflower
  • 4 eggs
  • 1/2 cup flour
  • salt
  • 1 cup vegetable oil
  • 5 tomatoes
  • 3 cloves garlic
  • 2 tbsp chicken bouillon
  • 1/2 large white onion

Wash and cut cauliflower into flat wedges. Separate eggs. Beat egg whites with an electric mixer until very fluffy. Add egg yolks and beat until well mixed and fluffy.

Add salt to flour in a shallow bowl. Dredge cauliflower in flour than coat in egg batter. Pan fry in oil until browned and cauliflower is soft.

Boil tomatoes, garlic, bouillon, and onion until soft. Blend well and serve sauce on the side of the cauliflower.
